Tomás Bermudez gears up for takeover at Hyde Ibiza
Mexican chef Tomás Bermudez will take to the kitchens of Hyde Ibiza’s Latin American restaurant Cuyo as part of the hotel’s pop-up series.
The takeover is the second event of Mondrian and Hyde Ibiza’s ‘Best of The Best Culinary Series’, which sees chefs from the World’s 50 Best Restaurants cooking up a storm in pop-ups running from June to September.
Renowned for his culinary hotspot La Docena, a neighbourhood oyster bar and grill, Bermudez will be joined by three top chefs from Mexico’s culinary scene.
On 19-20 July, the chefs will host a six-course dining experience paired with a unique cocktail and mezcal menu, exploring the vibrant flavours of Mexican cuisine and mixology. The menu includes a variety of fresh seafood dishes and sweet courses, including a grilled Zarandeado fish, guajillo garlic shrimp and Dulce de Leche Volcano, curated in collaboration between La Docena and Cuyo.
The dishes can be paired with a selection of Lágrimas de Dolores mezcals by German Gutierrez. The Masparillo, Cenizo, and an all new mezcal, imported directly from Mexico, will be on offer – guests will be the first to try tipples from the first batch, made from an agave plant that has never been used in mezcal production before.
