The Stafford London continues Courtyard Fire series with barbecue expert, Genevieve Taylor
Following on from the success of their first events with Hawksmoor, Lisa Goodwin-Allen of Northcote and Norma, The Stafford London will be welcoming chef and author Genevieve Taylor as part of their ongoing Courtyard Fire series.
On the 5 June, Taylor will join forces with Culinary Director Ben Tish and Executive Chef Jozef Rogulski to cook a collaborative menu from the outdoor grilling area in The Courtyard at The American Bar.
Genevieve will be serving up dishes that feature in her newly released cookbook, ‘Foolproof BBO: 60 Simple Recipes to Make the Most of Your Barbecue’. Alongside The Stafford team, the chef will be dishing up snacks of harissa lamb, pepper and date kebabs and stuffed bell peppers, mojo verde and crispy marjoram.
Taylor will follow that with starters of salmon, courgette and lemon kebabs with a herbed Greek yogurt and grass-fed beef tartare, pine nut puree, tallow crisp and aioli. Main courses are pork, fennel and lemon burgers with grilled aubergine and tomato relish and chargrilled octopus, grilled Romano pepper, borlotti beans and a fennel gremolata. To finish the chef has created desserts such as grilled pineapple with a chilli, rum and butter sauce, served with vanilla ice-cream.
As well as her latest book, Taylor has published another nine cookery books including the bestselling ‘Charred’, a complete guide to vegetarian BBQ. She also runs the Bristol Fire School, a cookery school dedicated to cooking over fire.
Discussing her inclusion in the Stafford Courtyard Fire series, Genevieve comments: “I’m delighted to be returning to The Stafford for another day at the BBQ with Ben and the team. It’s great to be cooking from Foolproof BBQ which was a great lockdown project, it will be fantastic to see people eating my food in real life at last.”
