The Savoy has unveiled its latest dining offering, Solas, an outdoor dining concept launching in partnership with Bowmore Islay Malt Scotch Whisky.
Set to launch on 21 April, Solas, from the Gaelic for light, joy and comfort, will be focused around a raw seafood bar concept and creative cocktails.
Blending the heritage of Bowmore and the Art Deco and Edwardian style of The Savoy, the outdoor dining concept will feature a centrepiece chandelier, inspired by the hotel’s 62 grand chandeliers and fused with the drama of the black rocks of the Scottish coastline where Bowmore whisky is made. The artwork will send rays of light from suspended shards of crystal, decanters and stoppers.
The seafood bar design also reflects the two brands by bringing together natural slate and granite with brass, and is backed by a presentation of Bowmore bottles aged over time.
Alongside raw seafood specialties, the menu will also include three oyster selections served in a Bowmore oyster luge, paired with a choice of whisky, lobster rolls, gravadlax and Blue Shrimp ceviche.
The drinks menu will also feature the Timeless cocktail, a serve that celebrates Bowmore’s craft, which has been refined over 240 years, alongside Golden Eye, a homage to James Bond and a selection of rare Bowmore expressions.
The Solas pop-up will open on 21 April and run until 21 June 2021.
