Pietro Mangani takes the helm at The Pavilions Phuket’s Alto Italian Restaurant & Cocktail Bar
Chef Pietro Mangani has made his Asian culinary debut at The Pavilions Phuket’s re-launched Alto Italian Restaurant & Cocktail Bar.
Echoing the fine-dining experience of its Roman forebear, Alto at The Pavilions Rome, The First Musica, Alto Italian Restaurant’s extensive menu uses creative ingredient combinations to elevate Italian classics. Chef Pietro’s Spaghetti al Nero incorporates surprising pops of pistachio, while his Cacio e Pepe con Tartufo is a truffle-topped rendition of the Roman classic.
Breaking from tradition, the menu also sees local Thai produce and international influences incorporated into the dishes. The Polpo Arrosto is a quintessential roasted octopus but served with chickpea hummus, pak choi, and Lucian sauce. Caught off the coasts of Thailand, Chef Pietro’s Dentice Rosso alla mediteranea (Layan red snapper) is cooked with tomatoes and capers and laid onto garden vegetables from Chiang Mai, while his signature tiramisu brings the menu to a classically Italian conclusion.
Open to both guests and non-guests of The Pavilions Phuket, Alto Italian Restaurant delivers an elevated dining experience, accompanied not only by fine wines and Italian-inspired cocktails but also views across Phuket’s dramatic, lush landscapes and the glittering Andaman Seas.
