Meliá London Kensington has announced the opening of Hispania, helmed by Michelin-starred chef Marcos Morán.
With interiors by Spanish designer Lorenzo Castillo, Hispania Kensington follows in the footsteps of thriving Hispania restaurants in the City of London and Brussels, serving up an array of authentic plates crafted with the very best Spanish produce.
The new menu will feature traditional dishes with a vibrant twist, made from the highest-quality, seasonal ingredients imported from Spain to achieve a truly authentic taste.
Signature dishes include Morán’s Fabada Asturiana, a rich Asturian bean stew with chorizo, cured sausage, lacón and bacon, which has been passed down in the Morán family for five generations, and an indulgent caramelised rice pudding, Arroz con Leche. To ensure flavours created in the kitchen reign true to classic dishes, produce will be sourced from Spain’s most renowned suppliers including acorn fed Ibérico ham from Cinco Jotas.
The drinks menu boasts a series of sophisticated cocktails, cosy after dinner sherries and a wide variety of Spanish Cervezas. And, because food lies at the heart of Spanish hospitality, the bar will also serve a menu of sharing plates, from Ibérico ham and Pan Con Tomate to Mahón and Manchego cheeses, with some of some of Hispania’s most emblematic plates available to enjoy bar-side.
“We’re thrilled to announce Hispania as Meliá London Kensington’s newest culinary partner,” says Garry Fortune, UK Director of Operations at Meliá Hotels International. “Committed to providing the finest Spanish hospitality, Hispania and Meliá are very much aligned, and we look forward to our guests immersing themselves in Hispanic culture with every bite and sip at our new restaurant.
