HKS to lead redesign of St Regis Mardavall
Global architecture and design firm HKS has been appointed by Arabella Hospitality SE to lead on the redesign of St. Regis Mardavall Mallorca’s Michelin-starred restaurant Es Fum as well as the garden restaurant, main swimming pool and resort’s new ‘Shore Club’ and gardens.
Commencing redevelopment in late summer 2021, the HKS proposals draw on Mallorca’s scenery, craft and the island’s connection with Spanish modern art. The project will create a contemporary, yet luxurious dining experience rooted in the area’s rich heritage, while complementing the existing design of the luxury resort.
The proposed interior design of the Michelin star restaurant, ‘Es Fum’ has taken inspiration from the traditional Spanish rural finca, a countryside estate where guests embrace the natural world alongside exquisite, locally sourced cuisine and wine. To further highlight Mallorca’s connection with art, the restaurant will display some of the art pieces from the hotel’s existing collection.
The colour palette of the new interior will be highlighted with blush tones, reflecting the shades of the local stone and buildings. Contemporary furniture will be set within the backdrop of local stone and timber, creating a sophisticated space.
Seating 70 people, the restaurant will open out on to a large terrace, which will be redesigned to complement the new restaurant and to frame the views of the gardens, swimming pools and the sea beyond.
In addition to the interior design of the restaurants, HKS has designed the new Shore Club, main pool area and gardens including new decked terraces overlooking the beach. Aimed at guests and locals, the bar will be the nestled within a striking landscape.

At the core of our design was the desire to keep the essence of the place while taking it forward into more contemporary way. By combining timeless contemporary design with local references, we reimagined Es Fum and the Shore Club, producing a unique and iconic dynamic for the St Regis Mardavall.”
Adding: “Alongside the exquisite landscape, we were inspired by Mallorca’s rich cultural heritage and incorporated materials, patterns and textures into the designs which together create something truly special that guests and locals alike can enjoy for many years to come.”
Elizabeth Staveley, Lead Landscape Architect, HKS also comments: “Drawing design reference from the island’s natural heritage, the new Shore Club, pool terraces and gardens have been inspired by the picturesque, coastal setting and vibrant, Mallorcan creativity. The design includes a light and elegant palette of locally sourced limestone, artisan furniture and nautical details, framed by gardens of saline tolerant, scented planting. New gardens around the main pool will include new palms and specimen plants set amongst drifts of grasses, agaves and lilies, against a backdrop of Mallorca’s famous crystal clear, turquoise blue seas.”
Situated on the southwest coast of Mallorca, St Regis Mardavall Mallorca resort was first opened in 2002. The hotel is arranged across terracotta-hued buildings with a view of the Mediterranean Sea.
The project will be completed during the winter closure periods of the hotel, with the restaurant works completed by the end of 2021 and the pool area by 2022.
