Leading Rocky Mountain restaurateur Gavin Fine (Fine Dining Restaurant Group/FDRG) has announced that he will debut his latest restaurant, The Bistro, inside The Cloudveil hotel in Wyoming.
Set to open in spring 2021 on Jackson’s historic Town Square, the Autograph Collection hotel, will draw on the area’s Western style, while bringing elements of understated luxury to the valley.
The Bistro will offer European style sidewalk dining and modern interiors. Its name pays homage to FDRG’s roots, as will the raw bar and a handful of rotating dishes, while the concept will bring a unique menu to life with the casual, premium experience that guests have grown to expect from the hospitality group.
Diners will be able to enjoy a menu of seasonal prepared dishes like those iconic to Parisian neighbourhood bistros whilst sampling from an inspired cocktail menu and interesting wine list, in a modern and comfortable atmosphere that will help to create a one-of-a-kind dining experience.
With over 17 years experience in event catering through Bistro Catering, in addition to The Bistro, FDRG will operate all food and beverage for The Cloudveil hotel, including several meeting spaces, private dining spaces and a unique rooftop deck.
The announcement of The Bistro comes in conjunction with the announcement FDRG would be closing their first restaurant, Rendezvous Bistro, at the end of the winter 2020/2021 season.
“It felt like the right time to end one chapter and begin another. We look forward to sticking to our French bistro roots, while creating a completely new dining experience for guests with the opening of The Bistro,” comments Gavin Fine. “Just as we did 20 years ago with Rendezvous Bistro, we hope to usher in the new Jackson Hole “camp dining room,” as well as a whole new set of memories for our locals and visitors.”
Located at the gateway to the Grand Teton National Park, one hour south of Yellowstone National Park, The Cloudveil will open in Spring 2021. In addition to housing The Bistro, the hotel will boast 100 guest rooms and suites; an expansive rooftop terrace overlooking Jackson’s Town Square and Snow King Mountain; a tranquil outdoor pool and garden; a state-of-the-art fitness center; and 7,500 square feet of indoor-outdoor meeting and event space featuring fireplaces, fire pits, and spectacular views.
Central to the hotel will be its design, with designers using raw materials and imagery to demonstrate the region’s main attributes – nature, exploration and wellness. Interior designers TruexCullins will lead, with assistance from architectural firms CLB and IBI Group.
Fine Dining Restaurant Group was born in Jackson Hole, Wyoming by Gavin Fine and Roger Freedman. Now encompassing several restaurants, a catering company, bodega, craft meat division and artisan ice cream line in Jackson Hole, FDRG opened their first restaurant, Rendezvous Bistro, in 2001.
