Conrad Nashville has announced the launch of three restaurant and lounge concepts that will welcome guests when the hotel opens its doors in the US city this May.
Spearheaded by James Beard Award-nominated business partners and husband-wife duo Elizabeth Blau and Chef Kim Canteenwalla, the trio of venues comprises a the restaurant Blue Aster and an adjacent cocktail and afternoon tea space dubbed The Lounge at Blue Aster, as well as a bar, Thistle & Rye, serving shareable plates.
Blue Aster will serve up American cuisine centred around fresh seafood and local ranch steaks, with a focus on the creative flavours of the South. Its seasonal menus will take a farm-to-table approach to dining, featuring ingredients sourced from local and regional suppliers across breakfast, lunch, dinner and a signature weekend brunch. Dinner highlights include hot stone ahi tuna, root vegetable wellington and Maine lobster pot pie.
Day-to-night destination The Lounge at Blue Aster will serve drinks and small plates, as well as an afternoon tea service featuring international teas, Southern cocktails, sandwiches, scones and pastries.
Thistle & Rye will boast live music, an indoor-outdoor bar and views of downtown Nashville. The menu, inspired by Blau and Canteenwalla’s travels, spans international street market dishes like sugar cane shrimp skewers and pork belly bao buns, as well as approachable classics including Nashville’s famous hot chicken sliders.
All three venues have been brought to life by the design firm Champalimaud, with an emphasis on rich textiles and natural light.
“Named for the iconic native Tennessee wildflower, we love that the Aster is known for its unique star shape symbolising love, wisdom and charm,” shares Blau. “Kim and I are so excited to bring the culinary inspirations we have gathered and honed over the years to these beautiful restaurants.”
Executive Chef Dwayne Edwards and Director of Food and Beverage Jean-Christophe LeVarrat will be joining the team at the 234-key property, which will be located in the heart of the US’s Music City.
