Chaat at Rosewood Hong Kong celebrating Diwali with one-night-only menu
Michelin-starred Chaat at Rosewood Hong Kong will be serving up an eight course tasting menu to celebrate Diwali.
Honouring the Hindu festival of lights on 12 November 2023, the menu has been designed by chefs Gaurav Kuthari and Dhiraj Kumar to celebrate the exuberance of India’s most colourful holiday.
The evening at Chaat will commence with Palak Patte Ki Chaat, a northern Indian snack of batter-fried spinach, pomegranate and yoghurt. A creamy King Crab soup infused with coriander and onion is next, followed by Lehsuni Salmon Tikka – a northern Indian dish elevated with Kashmiri chilli, turmeric, mustard oil and garlic – and smoky Tandoori Quail, inspired by the traditional tandoori chicken.
Main dishes include Lamb Chop Nihari, a traditional Indian stew with slow-cooked lamb in a saffron-infused curry sauce; Machli Ka Salan, a warming seabass curry from Hyderabad with delicate notes of peanut, sesame and mustard; and Navratan Pulao, a fragrant and comforting Basmati rice dish flavoured with saffron, flower essence and whole spices.
The meal concludes with Black Sesame Kulfi with Rabdi Falooda, a rich summer dessert from northern India made with black sesame kulfi (frozen Indian ice cream), along with layers of rabdi (thickened milk) and falooda sev (vermicelli noodles).
