Baur au Lac in Zurich has debuted its new restaurant, Marguita, housed in former fine dining restaurant, Pavillon.
With a refreshed identity and culinary concept, the restaurant launches with a Mediterranean-inspired menu and contemporary design by Martin Brudnizki. Its name honours the Mediterranean custom of naming establishments after significant women in the family. In this case, the name plays tribute to both Andrea Kracht’s mother and daughter, the current seventh generation owner of the hotel.
In a departure from the traditional grand hotel dining offering and in keeping with the current trend towards a more pared back culinary experience, Marguita introduces a laid-back, relaxed atmosphere. “Continuous evolution is essential for the future success of the entire hotel,” explains Kracht. “Marguita is in line with this philosophy and we are delighted to have set an important course for the future.”
Helmed by Head Chef Maximillian Muller, the kitchen showcases a twist on much-loved Mediterranean classics. Signature dishes include Sea Bass in Salt Crust with Tomato Vinaigrette, Linguine Vongole, Risotto al Limone, Amalfi Lemon with Limoncello and the Marguita ‘Pearl’ dessert with mixed berries and cream.
Sommelier Marc Almert has curated a wine list featuring over 150 quality wines. A third of these hail from Baur au Lac Vins, alongside those sourced especially for the restaurant. Cocktails include Italian classics with a twist, such as a Valencia Vesper with brandy and Oloroso sherry, a cognac-based Champagne Punch and Purple Negroni infused with lavender.
Marguita’s design champions Swiss craftsmanship throughout. Warm colours, including rich shades of yellow and burnt orange, blend with brass accents to create a vibrant and cosy setting. The space is embellished with discreet floral details and hand-painted motifs inspired by the regional flora and luscious gardens, including olive branches and edelweiss. Drawing inspiration from the building’s original floors, Brudnizki’s studio crafts intricate floral mosaics which take centre stage.
Cosy, plush banquette sit alongside chairs upholstered in soft linen or mohair which rotate depending on the season. The large windows invite natural light to flood the space, while offering views of the surrounding Baur au Lac Parc.
