Greek culinary star Asimakis Chaniotis is returning to his homeland this month, to launch a two-night pop-up at Lindos Village Resort & Spa in Rhodes. The London-based Michelin-starred chef has designed an eight-course tasting menu for the two intimate dinners, which will celebrate the island’s finest ingredients.
Curated in collaboration with Corporate Chef at Lindos Hotels Group Stavros Manousakis, the menu will include fresh sea urchin, poached beurre Monte lobster and Greek hogget, with desserts including Yorkshire forced rhubarb and strawberry and tonka bean parfait. A special dish has also been designed to celebrate the Aegean Sea, consisting of marinated sardines, fennel, ouzo, rock and sea samphire, pickled mustard seeds and smoked trout roe.
“I am thrilled to be partnering with Lindos Hotels and to be given the chance to cook in Greece again,” said Asimakis, who was born and raised in Athens. “I am very proud to be Greek and look forward to creating new dishes with Stavros, fusing the different flavours of Athens and Rhodes together.”
Inspired by his love of art, his passions lie in fine dining and French gastronomy, Asimakis has developed a cuisine that pairs the freshest and best produce. He is currently Executive Chef at the London restaurant Pied a Terre, but the pop-up will see him switch the UK capital for the sea views at the clifftop Lindos Resort & Spa, which is set in the enchanting cove of Vlycha Bay.
