Chef Nello Cassese, originally from Naples, Italy, has a deep-rooted passion for food that began in his childhood, when he watched his grandmother prepare traditional dishes like ragù and seafood. At just 20 years old, he won the prestigious Best Young Chef award in Tuscany. Since 2008, Cassese has worked alongside the famous British chef Gordon Ramsay in various acclaimed restaurants.

In 2016, he took the helm of Cipriani, the flagship restaurant at the Belmont Copacabana Palace in Rio de Janeiro, where he earned a Michelin star and numerous accolades. Throughout his career, Cassese has remained dedicated to celebrating the rich heritage of Italian gastronomy. It is this passion for Italy’s culinary traditions that he brought to Florentino for Vista Alegre. Inspired by the Renaissance art schools of Florence and Venice, Florentino embodies the timeless beauty and artistic heritage of Italy.
