Auberge du Jeu de Paume welcomes new Executive Chef
Anthony Denon has been appointed Executive Chef of prestigious Relais & Châteaux property Auberge du Jeu de Paume in the French town of Chantilly.
The 31-year-old, who has previously worked with culinary trailblazers Alain Ducasse, Christophe Saintagne and Jean-François Piège, will oversee the hotel’s Michelin-starred restaurant La Table du Connétable as well as chic bistro Jardin d’Hiver.
Denon’s cuisine is built around the concept of using natural, organic and seasonal ingredients, and he plans to source high-quality local produce to create mouth-watering meals in Chantilly.
“I am proud to join a maison as prestigious as the Auberge du Jeu de Paume,” says Denon. “It is an establishment that I have been following for a long time and certainly honours this beautiful region.
“I really want to demonstrate my passion by offering a local menu that reflects me: contemporary and natural. This is a great challenge.”
La Table du Connétable has been awarded one star in the 2020 Michelin Guide for France, with inspectors praising its “suave dining experience, flanked by fastidious service”.
