Amilla Maldives appoints Executive Chef
Amilla Maldives Resort & Residences has appointed French national Mickaël Farina as its new Executive Chef. Having become one of the youngest sous chefs in Sydney at the age of 20, Farina has held positions including head chef at The Landing restaurant in Wanaka, New Zealend, and worked under two Michellin-starred chef Rafael Costa e Silva at Lasai Restaurant in Rio de Janeiro.
“The day I was informed about the opening for an Executive Chef at Amilla Maldives, my heart skipped a beat,” Farina comments. “We have big long-term plans for Amilla: I’m excited about developing our in-house production concept, Homemade, and our plant-based Wellness Your Way programme; as well as introducing new concepts to the Maldives scene alongside proven Amilla favourites like sushi and Teppanyaki.”
In 2018, Farina was a semi-finalist in the San Pellegrino Young Chef award, and published a Maldives-inspired cookbook titled HiHsaaKurun. Amilla Maldives Resort & Residences is set on the Baa Atoll UNESCO World Biosphere Reserve, and comprises 59 overwater houses, 8 beach residences and multiple dining concepts including signature restaurant Feeling Koi, deli café The Emperor General Store and The Wine Shop & Cellar Door bar.
