Michelin-starred Daniel Rose hosts residency at Badrutt’s Palace

Chef Daniel Rose is set to bring his playful interpretation of French cuisine to St. Moritz for the first time.

Rose will host a culinary residency at Badrutt’s Palace Hotel, promising to evoke his motto, ‘jolie, généreux, and joyeux’.

The Michelin-starred chef first became a prominent figure in international gastronomy after opening his first restaurant, Spring, in Paris in 2006.

He currently helms Le Coucou in New York and La Bourse et La Vie in Paris. Originally from Chicago, Rose discovered his passion for cooking while studying at the American University of Paris, which led him to refine his craft at the Institut Bocuse in Lyon.

His early career included mentorship under legendary chefs such as Paul Bocuse in Lyon and Yannick Alléno at Le Meurice in Paris. Rose honed his expertise at establishments like Auberge des Abers in Brittany and Le Pré du Moulin near Avignon, experiences that instilled his lifelong respect for quality and precision.

In 2016, Rose opened Le Coucou in New York, a contemporary homage to French cuisine that earned him his first Michelin star and a James Beard Award for Best New Restaurant. Rose’s work extends to Air France’s business class dining and has been recognized with the Order of Agricultural Merit by the French Republic in 2022.

“Daniel Rose is celebrated for his modern take on classic French cuisine. His restaurants, Le Coucou and La Bourse et La Vie, have long been culinary hotspots recognized by both diners and the media,” says Richard Leuenberger, Managing Director of Badrutt’s Palace Hotel. “In St. Moritz, he will combine tradition, locality, and seasonality with the cuisine of Badrutt’s Palace Hotel to create a deeply emotional dining experience. He uniquely integrates the stories of grand hotels into his dishes.”

“My team and I will present a culinary experience that honours Badrutt’s legacy while opening a new chapter in the hotel’s festive tradition,” says Rose. “This collaboration provides a unique opportunity to connect with guests amidst the beauty of the Swiss Alps, where the splendor of the landscape meets the history and glamour of Badrutt’s Palace.”
