Bar Jackie at Broadwick Soho unveils an exclusive collaboration with Dalston restaurant Acme Fire Cult.
Diners at Bar Jackie can discover a limited edition Pinsa, a unique oval shaped pizza, inspired by Acme’s signature dish; Coal Roast Leeks with Pistachio Romanesco. It will debut at Broadwick Soho’s chic all-day dining restaurant, bar and terrace, which captures the art of Italian hospitality and warmth, serving aperitivo classics including a selection of Pinsa Romanas, freshly baked in the pizza oven, arancini and antipasti as well as negronis, vermouths and homemade gelati.
Meanwhile, the live-fire concept from chefs Andrew Clarke and Daniel Watkins, Acme Fire Cult places seasonal vegetables at the forefront of its menus. The collaborative dish combines the fiery creativity of Acme Fire Cult with the Italian flair of Bar Jackie, with a percentage of each Pinsa sale donated to the Chefs in Schools charity.
“It’s been great fun developing this special Pinsa with Broadwick Soho and we can’t wait for Soho to try it. Our Coal Roast Leeks with Pistachio Romesco is our signature dish and has been on the menu since we started as a pop-up,” says Clarke. “It’s our playful take on the Catalonian classic calçots con salsa romesco.”
Using leeks instead of the traditional calçots, which are available all year round, they are grilled directly on the coals to blacken on the outside and steam in the middle. The blackened exterior is removed and sweet centre served, paired with a green romesco sauce made of pistachios, almonds, green pepper and Jalapeno. “We make a leek oil from the excess leek tops, to dress the dish and finish with crushed pistachios, whipped tofu and hibiscus salt,” he adds. “This dish defines Acme; live-fire, mostly vegetable, minimal waste.”
“We’re so excited to collaborate with Acme Fire Cult, who are redefining traditional ideas of live-fire cooking in a fun and creative way. At Bar Jackie and its sister restaurant Dear Jackie, we place a huge emphasis on seasonal produce and reinventing classic recipes with a modern twist, so our partnership was a perfect fit,” says Chef Harry Faddy of Broadwick Soho. “It’s been fantastic to work with the team to develop the Coal Roast Leeks and Pistachio Romesco Pinsa. We can’t wait for guests to discover the flavours of Acme Fire Cult’s signature dish on our crisp Pinsa Romanas.”
