Chef Christian Spalvieri joins Palazzo Ripetta Rome

Palazzo Ripetta Rome appoints Christian Spalvieri as the property’s new Executive Chef.

The Roman-born chef’s culinary vision is shaped by precision, technical excellence, and boundless creativity. After earning a diploma from IPSSAR Marco Gavio Apicio in Anzio, Spalvieri rose to prominence on the international culinary stage through prestigious collaborations, including with the Royal Opera House in Covent Garden.

His most formative role came under the mentorship of Gordon Ramsay, an experience he refers to as his “first true school,” where he internalised the values of discipline and precision—essential foundations for delivering a refined, high-quality culinary experience that meets the expectations of elite clientele.

Returning to Italy marked a pivotal moment in the chef’s journey, allowing him to refine and solidify his culinary identity. This was further enriched by a collaboration with L’Alchimia in Milan, where he worked alongside Alberto Tasinato and Giuseppe Postorino.

These experiences culminated in his first role as Chef de Cuisine at La Maison du Gourmet in Parma, followed by the opening of his own restaurant in Rome, Vitti by Christian Spalvieri. Here, he showcased a successful fusion of Italian and Japanese culinary traditions.

Spalvieri now takes the helm as Executive Chef at Palazzo Ripetta’s San Baylon restaurant.
