With the recent unveiling of the 2023 Michelin Guide Hong Kong Macau, six Marriott International restaurants – Tin Lung Heen, L’Envol, Rùn, Man Ho, Tosca di Angelo, and Lai Heen – have received recognition, earning a total of nine stars.
Adding to the 2022 and 2023 Michelin Guide across different cities, Marriott International’s restaurants continue to perform exceptionally. In total, 26 Marriott International restaurants in Greater China have received recognition, earning a total of 17 stars, with five two-Michelin-star and seven one-Michelin-star restaurants, as well as 14 Selected restaurants.
Inspired by the architecture of a traditional Chinese tea pavilion, Rùn at The St. Regis Hong Kong was promoted to a two Michelin-star rating in 2023. Led by Executive Chef Hung Chi-Kwong, Cantonese cuisine is interpreted in a sophisticated and contemporary take. Signature dishes include Deep-Fried Diced Wagyu Beef Puff, Black Pepper, Wok-Fried Crab Claw, Dried Shrimp, Ginger, Spring Onion, Layered Bean Curd Sheet and Double-Boiled Abalone Soup. The restaurant also hosts a tea master who curates a unique tea pairing to refine the entire exceptional dining experience for guests.
Tin Lung Heen at The Ritz-Carlton, Hong Kong has maintained its two Michelin star rating for eleven consecutive years, owing to its exceptional modern Cantonese cuisine. The talented Chef de Cuisine at Tin Lung Heen, Paul Lau, is one of Hong Kong’s most experienced Cantonese chefs. The restaurant seamlessly blends timeless Cantonese traditions with fresh, international ingredients, resulting in an elevated culinary experience. Notable dishes include the Double-Boiled Chicken Soup with Fish Maw in Baby Coconut, Barbecued Pork with Osmanthus Flower Honey, and Steamed Crab Claw with Egg White and Huadiao Wine.
L’Envol at The St. Regis Hong Kong offers an innovative interpretation of French haute cuisine and continues to be awarded with two Michelin stars in 2023. Helmed by chef Olivier Elzer, one of the leading French chefs in Hong Kong, and his team. Signature dishes include L’Oursin D’Hokkaido (Hokkaido sea urchin, gamberoni prawn and crunchy fennel); and Gros Grain Oscietre Kaviari (Brittany razor clams “à la marinière”, Caviar Gros Grains Oscietre Kaviari), incorporating the use of selected seasonal ingredients and produce from France and Asia.
As a signature Chinese restaurant brand of Marriott International, Man Ho is committed to delivering a unique culinary experience that combines authentic Cantonese cuisine with innovative concepts. Man Ho at JW Marriott Hotel Hong Kong has retained its one Michelin star for three consecutive years. The culinary team at Man Ho is led by Executive Chef Jayson Tang, who updates favoured dishes of classic Chinese haute cuisine. Signature dishes include Honey-Glazed Barbecued Iberico Pork Loin, Pan-Fried Fish Maw in Almond Milk Chicken Broth and Baked Whole South African Dried Abalone Puff with Wild Mushrooms.
Tosca di Angelo, the Italian restaurant at The Ritz-Carlton, Hong Kong, is celebrating its tenth consecutive year as a Michelin-starred establishment. Chef Angelo Aglianó, the Director of Tosca di Angelo, showcases his culinary prowess by utilising seasonal ingredients to create a range of Mediterranean flavours. Notable dishes include the Risotto “Acquerello” with Hokkaido Sea Urchin and Sea Asparagus, Mediterranean Sea Bass with Green Peas, Shallots, and Confit Cherry Tomatoes, and Turbot Fillet with Green Beans Purée, Spring Onions, and Datterino Tomatoes.
Lai Heen at The Ritz-Carlton, Macau has once again been awarded one Michelin star for the seventh consecutive year. With over 40 years of culinary experience, Executive Chef Jackie Ho displays a finesse in authentic Cantonese craftsmanship, elevating the natural delicate flavour and aroma of each ingredient. Dishes to highlight include Deep-Fried Chilean Sea Bass Fillet with Crispy Garlic, Stewed Prawns with Port Wine Sauce in Casserole, and Steamed Crab Claw with Egg White, each bringing an unexpected, yet delightful flavour to the palates of diners.
