The Reykjavik Edition is set to welcome Diego Muñoz as its guest chef for Iceland’s Food and Fun Festival 2023, bringing his Peruvian influences to the hotel’s signature restaurant Tides with a menu using only Icelandic ingredients.
Back for its 21st year, Food and Fun is a globally recognised competition where chefs from the USA and Europe are invited to Iceland, taking over local restaurants to create gourmet menus using Icelandic ingredients for one-week. Celebrity chef judges are invited to rate all the food, and three chefs are chosen as finalists to compete for the title of Food and Fun Chef of the Year.
Usually at the helm of rooftop bar and restaurant, Oroya at The Madrid Edition, Muñoz will work with only the freshest seasonal and sustainable Icelandic ingredients to develop a specially curated menu to be served in Tides for Food and Fun. Diego Muñoz belongs to the generation of Latin American chefs who have grown up abroad and who have returned to their birthplace in search of exotic ingredients and ancestral production. Through his cuisine, Muñoz nurtures heritage, unlimited creativity, recognition of local producers and multicultural influences.
Tides Restaurant, helmed by Iceland’s Gunnar Karl Gíslason – the first chef to be awarded a Michelin star in Iceland for his restaurant Dill – has a strong focus on seafood alongside grilled meats and seasonal vegetable dishes cooked mainly over an open fire. Tides offers the very best of the country’s natural ingredients. In the mornings, the breakfast menu includes Icelandic yoghurts and pastries, along with a fresh à la carte menu of hot dishes. For those dining for lunch and dinner, Chef Gunnar Karl Gíslason ensures that a modern Icelandic cuisine and culture runs through everything he creates in the kitchen, partnered with an impressive global wine list.
