Experimental Group is set to open its new restaurant and bar this summer as the first stage in the transformation of Gran Hotel Montesol Ibiza, a historic property that opened in 1933 – as the first of its kind on the island – during an era marked by global industrialisation.
Sabbaba Montesol will open at the end of July following an extensive redesign by Dorothée Meilichzon, the award-winning French hospitality designer behind some of the most buzzworthy bars, hotels and restaurants across the globe.
Sister restaurant to Balagan Paris, the restaurant will house 60 seats in the main restaurant, 90 seats on the terrace on Vara Del Rey and 120 seats on the rooftop, with views overlooking Ibiza old town and the port.
Head Chef Tomer Amedi, who is known for founding renowned Israeli eatery, The Palomar, in London, will serve diners inventive Israeli cuisine from the open kitchen and robata grill. A Middle Eastern twist to Spanish tapas using fresh produce, dishes will be flavoursome, energetic and colourful. The wine list comprises a carefully picked selection, from the smallest Spanish bodega to the biggest names, ranging from countries bordering the Mediterranean Sea.
The arrival of Sabbaba Montesol is the first stage will be followed by the refurbishment of 33 rooms in 2022, breathing new life into the hotel while remaining true to its heritage as a UNESCO Property of Cultural Interest, officially listed as a Bien de Interés Cultural by the Spanish Ministry of Culture.

We cannot wait for guests to experience his inventive new menu and the exciting selection of cocktails in the bar.
