A new fine-dining experience by Mallorcan chef Jordi Cantó has opened at Castell Son Claret.
Sa Clastra is a gourmet restaurant that captures the tastes, sight and aromas of classic dishes from around the world and reinterprets them using ingredients supplied by local producers on the island of Mallorca.
The restaurant will honour the heritage of the slow food tradition, bringing lamb reared in the pastures close to the hotel, oranges from Sóller in the north, cuttlefish from Port Andratx and lemons from Castell Son Claret’s own estate.
The full Sa Clastra menu is yet to be revealed, but will feature many of the chef’s favourite dishes, such as Pickled Cordoniz (pickled quail’s egg), Lamb Ensaimada (a typical Mallorca puff pastry circle); Burbualles de Conejo de Campo (a thick wild rabbit soup); Ibiza flaó tart with citrus ice cream; and Variat, a typical tapas dish served as a snack in many bars.
Cantó has also taken the traditional Sticky Rice with Mangothat he loved eating on the streets of Thailand and paired his version of the dish with the sweet taste of apricots from the village of Porreres in Mallorca.
Sa Clastra is named after the traditional central patio or cloister at the heart of Spanish castles such as Castell Son Claret. Diners will sit at tables cosseted in the warm glow of soft lights reflected against the ancient stone of the castle walls.
The restaurant will serve dinner five nights a week and two gourmet tasting menus will change according to the rhythm of the seasons and what is available locally. A wine pairing option will continue the exploration of fine Mallorca produce, with suggestions from smaller private and family-run cellars on the island.
Located on the outskirts of the inland village of Es Capdellà in one of the biggest private estates in Mallorca, Castell Son Claret is located 30 minutes from Palma city centre. This Leading Hotel of the World is located within 326 acres of unspoiled countryside at the foot of the UNESCO protected ”La Tramuntana” mountains. The former 19th century castle, meticulously renovated in 2013 welcomes guests to a unique experience with 41 luxurious rooms and suites.
