As part of its deluxe all-inclusive offering, Emerald Maldives Resort & Spa has announced the launch of its new plant-based menus across all six of its F&B outlets including award-winning restaurant Amazònico.
Inspired by increasing guest appetite for healthy food options and the trend towards vegan dining, all the new recipes will be complemented by a creative list of mocktails.
Amazònico will now offer both vegan and vegetarian dishes including the Jardin Quemado and Chilean Salads, while the resort’s Aqua Restaurant has created a new vegan pumpkin soup, made using fresh pumpkins from the hotel’s vegetable patch will be available.
Elsewhere, Le Asiatique has created a special vegan fried rice and at the Beach Grill, guests can enjoy a cooling tomato gazpacho. Sweet treats include blueberry and orange cakes and Emerald Maldive’s healthy green tea crème brûlée.
For the ultimate take of plant-based luxury, the resort has also launched a vegan floating breakfast to be enjoyed in the privacy of guest’s own pools. Dishes include almond chia seed pudding, fresh bread, fruit salads, herbal teas and exotic fresh juices.
General Manager Srikanth Devarapalli comments: “Since opening the resort in 2019, we have seen more of a demand for really healthy, plant-based food, so we have enjoyed adapting the menu to fit this trend.”
“Travellers generally seem more health-conscious than they used to be and going on holiday now doesn’t necessarily mean changing your diet – it is a lifestyle movement and we are moving with it too. We are continuously updating and evolving our menus and look forward to surprising our guests,” he continues.
In addition to the new menus, Emerald Maldives is set to introduce the ‘Green Corner’ at Aqua restaurant from January. Guests will be able to choose from a variety of different ingredients from which to prepare their own smoothies and juices and these refreshing drinks will also be available at both the Sunrise and Sunset Pool Bars and new for 2021 – in the villa’s very own minibars.
Recognising the increased interest in alcohol-free beverages, the hotel is also launching a new mocktail menu for the new year, with beverages such as non-alcoholic Mango Mule or Passionfruit Daiquiri to look forward to.
