Five-star luxury hotel, Ultima Gstaad has announced it will revive its collaboration with globally renowned Peruvian restaurant group COYA to bring the flavours, colours and energy of Latin American to the Swiss Alps.
From mid-December through to March, award-winning luxury lifestyle group COYA will take over the hotel’s new property Ultima Gstaad Promenade, offering their signature sharing platters, expertly made cocktails and a sense of a true Latin American fiesta with dancers, DJs and live music.
The residency follows on from the success of a one month pop-up at the Swiss property last year, and will build upon the same sharing plate concept for which COYA is known, encompassing traditional Peruvian cuisine, with influences of Japanese, Spanish and Chinese cooking techniques.
COYA’s Regional Executive Chef, Fabrizio Fossati will debut an exclusive ‘Taste of Lima’ menu and room service for the pop-up with small bites taking traditional street food and elevating it as the ultimate food fusion.
Th restaurant’s much-loved dishes such as Ceviche de Atun Chifa made with albacore tuna, sesame soy and rice cracker will feature as well as Lomo de Res with spicy marinated beef fillet, Peruvian chilli and crispy shallots and the brand’s signature Churros de Naranja – orange and lime churros with warm dulce de leche and chocolate sauce.
Each dish has been inspired by the chef’s recent expedition to South America in search of new flavours and takes inspiration from traditional delights such as empanada, croqueta and tostada, but reimagined for modern luxury dining.
Ultima Gstaad Promenade guests will be among the first to try the new menu, which launches this winter at COYA’s pop-up restaurant within the newly designed property.
Alongside the food offering, a unique cocktail menu has also been developed, which is inspired by the Swiss Alps and available at COYA’s Pisco Bar & Lounge.
Along with COYA’s famous Pisco Sour, cocktails include Dolce & Banana, made with a combination of vodka, banana, hazelnut and Swiss chocolate; Mountain Range Punch, a mixture of whisky, gingerbread spiced tea, vanilla, orange and toasted marshmallow; and Hot Honey Toddy, comprising aged rum, honey and lemon, spices, tonka bean and tea.
The globally renowned brand with also be curating an unforgettable New Year’s Eve party featuring a four-course Peruvian feast, live entertainment and South American carnival dancing.
The residency meanwhile, will run from 12th December 2020 until Monday 1st March 2021.
