Agave-inspired cocktail bar opens in San Miguel de Allende
A cocktail bar inspired by the nobility of agave spirits has opened on the terrace of a new boutique hotel in the historic Mexican city of San Miguel de Allende.
Bekeb at Casa Hoyos, which seeks to connect patrons with the authentic aromas and flavours of Mexico, takes its name from the Tzotzil term ‘bek’, meaning ‘seed’.
It has been created by a group led by mixologist Fabiola Padilla, who is known for her collaborations with Manhattan institutions Diego bar in Ian Schrager’s Public Hotel New York City and Enrique Olvera’s Cosme restaurant.
Bekeb’s signature serves include the Miranda, a cocktail incorporating mezcal, Mediterranean herb liqueur, vermouth and sherry, and the Lavender Sour, blending gin, aromatised wine, lavender flowers, liqueur de violette and lemon.
Each drink is designed to harmonise well with a food menu featuring ambitious Mexican cuisine by Matt Conroy, chef at Oxomoco in Brooklyn, and Isabel Cross, pastry chef at Cosme.
